Apple & Date Salad (2 points)

2 servings (1/2 mixture each)


Ingredients:

1 medium apple

1 wedge lemon, juice only

26g dried dates, cut into strips

1/4 cup 0% plain siggi's yogurt

1/2 medium orange, juice and zest

1 tbsp date powder


Directions:

Core the apple. Slice thinly and then cut into matchsticks. Moisten with the lemon juice to keep them from turning brown. Set aside.

Cut the dates into strips, then combine with the apple sticks. Set aside.

Mix the yogurt, orange juice/zest and date powder together until combined. Set aside.

Pile up the apple/date mixture onto a bed of lettuce and dress with the orange yogurt mixture.


Suggested Serving: Serve with a sprinkle of toasted almonds.
