Apple Fennel Slaw (0 points)

8 servings (1/2 cup each)


Ingredients:

1 granny smith apple, sliced into matchsticks

2-3 tbsp fresh lemon juice, divided

1 fennel bulb, thinly sliced

2 celery ribs, thinly sliced

1/2 cucumber, halved and sliced thinly

1/2 red onion, thinly sliced

2 tsp no added sugar pancake syrup


Direction:

In a large bowl, add the apple. Cover with a tbsp of lemon juice. Mix to make sure all the apple is covered.

Add the sliced fennel, sliced celery, sliced cucumber and red onion. Mix together and set aside.

In a small bowl, combine the remaining 2 tbsp of lemon juice with the pancake syrup and drizzle over top of the salad. Toss to mix well.


Variations:

Orange or pear may be substituted for the apple.
