2 servings (1/2 apples + 1/2 oatmeal)
Ingredients:
1 apple, peeled, cored and evenly sliced
1/4 tsp ground cinnamon
1/2 tsp fresh lemon juice
2/3 cup uncooked rolled oats
2/3 cup water
2/3 cup unsweetened almond milk
1 pinch salt
15g dried dates, chopped
Directions:
Preheat the oven to 350F. Prepare a baking sheet by lining it with parchment paper. Set aside.
Toss the apple slices with cinnamon and lemon juice. Pour onto a prepared baking sheet.
Bake until soft, about 20 minutes.
Meanwhile, in a small saucepan, over high heat, add the oats, water, almond milk and salt. Stir to mix.
When it comes to a boil, reduce to low medium, add the chopped dates and cook until thick and creamy.
Split the cooked apples between the 2 bowls and top with the cooked oats.
Suggested Serving: Serve with additional almond milk, nuts, additional cinnamon, maple or date syrup.
