Ingredients:
1 cup flour
2 tbsp splenda
1 tbsp baking powder
1 pinch table salt
1/2 cup plain fat free greek yogurt
1 egg
1 tsp vanilla extract
1/2 (to 3/4) cup microwave gooey apples (see recipe)
1 egg white
Directions:
Preheat oven to 350F. Prepare a baking sheet by putting down parchment paper.
Prepare the microwave gooey apples (see recipe). Set aside to cool.
In a medium bowl combine the flour, sweetener, baking powder and salt. Mix well. Set aside.
In another medium bowl combine the yogurt, egg and vanilla extract. Mix well.
Add the wet ingredients to the dry ingredients and mix until combined.
Add in the apples and knead a few times to mix them in.
Form the dough into a 7" circle. Cut into 6 triangles.
Place the triangles onto the prepared baking sheet.
Beat up an egg white and paint each triangle.
Bake for 20-25 minutes until each scone is cooked through and golden brown.
Variations:
Cranberry - substitute the microwave gooey apples with 1/2 cup cranberry sauce (see recipe).
Chai Apple - substitute the microwave gooey apples with chai gooey apples (see recipe).
Strawberry - substitute the microwave gooey apples with 1/2 cup of chopped strawberries.
