Asian Spicy Squash (1 point)

3 servings (1/2 cup)


Ingredients:

1 1/2 cups butternut squash, peeled, seeds removed and cubed

1 1/2 tbsp soy sauce

1 tbsp red curry paste

1 tbsp rice wine vinegar

1 1/2 tsp sesame oil

1 tsp sriracha chili sauce


Directions:

In a large bowl, combine all the ingredients. Mix well.

Spread on a lightly sprayed foil lined baking sheet.

Either bake @ 400F oven for 30-40 minutes or air fry @390F for 15 minutes or until cooked through.


Suggested Serving: Excellent side dish.
