Baked Artichokes (2 points)

2 servings (1/2 mixture)


Ingredients:

1/4 medium onion, thinly sliced

1 tsp minced garlic

1/4 cup fat free chicken broth

1/2 tbsp lemon juice

1 tsp dried parsley

1 pinch red pepper flakes

14 oz can artichoke hearts, drained and chopped

3 tbsp breadcrumbs

3 tbsp light parmesan cheese

1 tsp italian seasoning


Directions:

Preheat the oven to 375F. Heat a lightly sprayed large skillet on medium high heat.

Add the onion and cook until the onion is lightly browned, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the chicken broth, lemon juice, parsley and red pepper flakes. Stir in the artichokes. Set aside.

Mix together the breadcrumbs, cheese and seasoning. Evenly sprinkle over the artichoke mixture and bake for 15-20 minutes or until hot all the way through. For more colour, broil for a minute but watch carefully.
