Banana Mini Cheesecake (1 point)

3 servings (1 serving each)


Ingredients:

1 medium banana, ripe

3/4 cup fat free cottage cheese

1/4 cup plain 0% siggi's yogurt

1 egg

1/4 tsp vanilla extract

1 tsp ground cinnamon

44g vanilla protein powder


Directions:

Preheat the oven to 350F. Prepare 3, 1 cup ramekins by lightly spraying it with oil. Set aside.

Add all the ingredients into a blender and blend until the cottage cheese is broken down.

Divide the batter, evenly, into the prepared dishes. Bake for 35-40 minutes or until the cheesecakes are cooked through.

Cool completely and then refrigerate overnight.


Suggested Serving: Serve with fruit and light whipped cream.
