White Bean and Tuna Salad (2 points)

4 servings (1/4 mixture each)


Ingredients:

15 oz can white beans, drained and rinsed

2 cans tuna in water, drained and mashed

1/2 cup tomatoes, chopped

1/2 cup cucumbers, chopped

2 tbsp kalamata olives, sliced

2 tbsp red onion, minced

2 tbsp capers, drained

2 tbsp fresh parsley, chopped

2 tbsp fresh basil, sliced

2 tbsp lemon juice

2 tbsp red wine vinegar

4 tsp olive oil

1 tbsp dijon mustard

1 tsp minced garlic

1 tsp greek seasoning


Directions:

To a large bowl, add the beans, tuna, tomatoes, cucumber, olives, onions, capers and fresh herbs. Set aside.

To a small jar, add the dressing ingredients; lemon juice, red wine vinegar, mustard, olive oil, garlic and greek seasoning. Shake.

Pour dressing over the bean and tuna mixture. Mix. Let sit for at least 30 minutes before serving.


Suggested Serving: Serve over greens with a squeeze of lemon.
