Ingredients:
2 medium bananas, ripe, mashed
1 egg
1/3 cup unsweetened applesauce
1/2 tsp vanilla extract
3/4 cup kodiak mix
1/2 tsp baking powder
3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
Directions:
Preheat oven to 350F. Spray a donut pan with cooking spray.
Combine bananas, egg, applesauce and vanilla into a large bowl.
Combine flour, baking powder, cinnamon and nutmeg in a separate bowl.
Stir dry ingredients into the banana mixture.
Divide the batter (2-3 tbsp) evenly into each well of the donut pan.
Bake 12-15 minutes, or until a toothpick inserted in the center comes out clean.
Cool on a wire rack.
Suggested Serving: Top with pudding, yogurt, peanut butter or glaze and then sprinkle with granola, coconut, nuts or seeds.
You could use any of the other protein pancake mixes or substitute with flour. Be sure to adjust your points as necessary.
What can I substitute for the Kodiak mix?
