Ingredients:
14 oz bananas, ripe and mashed
4 oz unsweetened applesauce
4 eggs
1 oz natural peanut butter
1 tsp vanilla extract
4 oz uncooked oats
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
4 oz blueberries, fresh or frozen
Directions:
Preheat oven to 350F. Lightly spray an 8" x 8" square or 9" round pan. Set aside.
Mix all the ingredients, except the blueberries, together. Mix well.
Fold in the blueberries.
Pour batter into prepared pan.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Suggested Serving: Serve hot, warmed up or cold with fruit, yogurt or cream cheese.
