Ingredients:
1 2/3 cups rolled oats
4 tbsp splenda
1 tsp ground cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3 medium bananas, ripe, mashed
2 large eggs
1 cup plain fat free greek yogurt
1/4 cup unsweetened almond milk
1 tsp vanilla extract
Directions:
Preheat oven to 350F.
Spray a non stick 8 mini loaf pan lightly with oil.
Combine the oatmeal, splenda, cinnamon, baking powder, baking soda and salt together. Set aside.
Whisk together the bananas, eggs, yogurt, milk and vanilla in another bowl.
Add the wet ingredients to the dry and mix until just combined.
Divide the batter evenly into the mini loaf pan.
Cook for 25-30 minutes until golden brown.
Suggested Serving: These can be eaten cold or microwaved, with or without milk.They can be kept up to a week in the refrigerator and freeze really well. You can add in 1/3 -1/2 cup of chocolate chips, berries, cut up soft fruit, nuts or seeds. Be sure to add any extra points.
So good!! I made these as muffins with parchment muffin cups. I divided the mixture in 1/2. added raisins to one 1/2 and chocolate chips to the other 1/2. recipe made 21 muffins! Love it!

Does the recipe for Oatmeal Mini Loaves make 1 loaf or 8 minis? Each mini 1 point or 1 loaf - 8 servings - 1 point per serving?
