Banana Chocolate Chip Mini Muffins

22 servings (1 each)


Ingredients:

1 cup kodiak pancake mix

1 cup quick oats

1/2 tbsp ground cinnamon

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp table salt

65g healthy crunch dark chocolate chips

2 large bananas, ripe

1 egg

1/3 cup olive oil

1/3 cup unsweetened almond milk

1 tsp vanilla extract


Directions:

Preheat the oven to 350F. Prepare a mini muffin tin by lightly spraying or lining with 22 parchment paper liners. Set aside.

In a large bowl, combine the kodiak mix, oats, cinnamon, baking powder, baking soda and salt.

Stir in the chocolate chips. Set aside.

In a blender, add the bananas, eggs, oil, milk and vanilla. Blend and add the contents into the large bowl and combine until just mixed.

Divide the batter, evenly, into the prepared pan (about 2 tbsp each).

Bake for 15-20 minutes until golden brown and cooked through.
