Banana Oatmeal Pancakes (2 points)

1 serving (4-6 pancakes)


Ingredients:

4 oz banana, ripe

2 eggs

1 oz rolled oats

1/8 tsp ground cinnamon

1 pinch of table salt


Directions:

Mash the banana with a fork. Whisk in the eggs, oatmeal, cinnamon and salt until smooth. Let the batter sit for a few minutes to thicken.

Heat a lightly sprayed skillet over medium low heat. Add a couple of tbsp of batter to the pan, cook about 2 minutes and flip to cook on the other side. Watch carefully as they can burn easily.

Repeat until batter is gone.


Suggested Serving: Serve with butter, yogurt, fruit and/or nuts.
