Banana Waffles/Pancakes (1 point)

3 servings (2 pancakes each)


Ingredients:

6 tbsp kodiak mix

1/2 tsp baking powder

1/4 tsp ground cinnamon

1 medium banana, ripe and mashed

3 tbsp unsweetened almond milk

1 egg

1/2 tsp vanilla extract


Directions:

Stir together the kodiak mix, baking powder and cinnamon in a small bowl and set aside.

Whisk together banana, milk, egg and vanilla in another bowl.

Add dry ingredients to wet and stir until just combined.

Spray a mini waffle iron, griddle or skillet with oil.

Spoon 2 tbsp of batter to the hot appliance.

Cook 2-3 minutes per side or until golden brown.

Repeat with remaining batter.


Suggested Serving: Serve with fruit and syrup.
