Basil Strawberry Spinach Salad (1 point)

4 servings (1 cup each)


Ingredients:

4 cups uncooked spinach

1 cup strawberries, chopped

1/2 cup cucumber, chopped

1/4 cup fresh basil, chopped

1/8 medium red onion, sliced thin

2 oz goat cheese, crumbled

6 tsp pepitas


Directions:

In a large bowl, mix the spinach, strawberries, cucumber, basil and onion.

Split into 4 portions and sprinkle each portion with 1/2 oz of goat cheese and 2 tsp pepitas.


Suggested Serving: Serve with a drizzle of balsamic glaze.
