Ingredients:
3 medium cooked beets, bite size pieces
4 cups arugula
47 gm goat cheese, crumbled
1/4 red onions, thinly sliced
1 tbsp pepitas
Directions:
Beets should be cooked a head of time. You could bake (400F for 1-2 hours) or boil (45-60 minutes) or pressure cook (high for 20 minutes). Cool and cut into bite size pieces.
Assemble the salad.
Suggested Serving: Serve with a drizzle of balsamic glaze.
