Black Bean Tacos (0 points)

Ingredients:

1 15 oz can black beans, drained and rinsed

1/4 cup salsa

1 tbsp taco seasoning


Directions:

In a food processor or blender, blend the beans, salsa and taco seasoning.

Spray a large skillet, heat to medium high and add the processed bean mixture. Cook it for about 5 minutes.

Spread a few tablespoons of the black bean filling onto a tortilla and fold in half.


Note: You could make these tacos crispy by spraying another large skillet, heat to medium high and fry the tortillas, on both sides, until crispy and golden brown.


Suggested Serving: Serve with cilantro yogurt sauce and mango coleslaw.
