Blueberry Banana Muffin Tops

6 servings (1 each)


Ingredients:

1 cup kodiak pancake mix

1 small banana, ripe and mashed

1/2 cup fat free greek yogurt

1 dash vanilla extract

1/2 cup blueberries, fresh


Directions:

Preheat the oven to 350F. Prepare a muffin top pan by lightly spraying 6 wells with oil. Set aside.

Add the kodiak pancake mix to a bowl. Set aside.

Blend up the banana, greek yogurt and vanilla extract. Add the mixture to the kodiak and mix until just combined. If the mixture is too stiff, add a splash of unsweetened almond milk.

Fold in the blueberries. Divide the batter evenly into the 6 wells.

Bake for 20-25 minutes until golden brown and cooked through.
