Blueberry Banana Oatmeal Muffins

Ingredients:

1 1/3 cups rolled oats

1 cup kodiak pancake mix

2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp table salt

2 medium bananas, ripe and mashed

1/2 cup unsweetened applesauce

1 large egg

1 tsp vanilla extract

1 cup fresh blueberries


Directions:

Preheat oven to 350F. Prepare a 12 well muffin tin by lightly spraying 6 wells. Set aside.

Add the oats, kodiak, baking powder, cinnamon and salt to a large bowl. Mix and set aside.

In a medium bowl, add the mashed bananas, applesauce, egg and vanilla. Mix well and add to the dry ingredients until just combined.

Fold in the blueberries. Divide up the batter into the 6 prepared wells. Make sure to mound the batter so it is higher in the centre.

Bake for 25-30 minutes or until golden brown and a toothpick inserted into the centre comes out clean.
