Blueberry Cottage Cheese Bread (2 points)

Ingredients:

200g uncooked quick oats

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

300g fat free cottage cheese

2 medium bananas, ripe

2 eggs

2 tsp vanilla extract

100g blueberries


Directions:

Preheat the oven to 350F. Prepare a 9" x 5" loaf pan by lightly spraying with oil. Set aside.

In a medium bowl, combine the oats, baking powder, baking soda and cinnamon. Set aside.

Blend the cottage cheese, bananas, eggs and vanilla until the cottage cheese is broken down. Add to the oat mixture. Let sit 10 minutes.

Fold the blueberries into the batter and pour into the prepared pan.

Bake for 50-60 minutes or until golden brown and baked through.
