Blueberry Oat Bran Muffins (2 points)

12 servings (1 muffin each)


Ingredients:

3 medium bananas, ripe and mashed

1/4 cup plain 0% siggi's yogurt

4 eggs

2 tsp vanilla extract

1 1/2 uncooked oat bran

1/2 cup quick oats

1/2 cup kodiak pancake mix

6 tsp date powder

3 tsp baking powder

1 cup blueberries


Directions:

Preheat the oven to 350F. Prepare a muffin tin by lightly spraying it with oil or lining it with parchment paper cups. Set aside.

In a large bowl, whisk together the bananas, yogurt, eggs and vanilla. Set aside.

In another large bowl, combine the oat bran, oats, kodiak mix, date powder and baking powder. Add the dry ingredients to the wet and mix until just combined.

Fold in the blueberries. Divide the batter, evenly, into the prepared baking pan.

Bake for 25-30 minutes or until muffins are golden brown and cooked through.
