Ingredients:
3 oz banana, ripe and mashed
1 large egg
1 oz almond milk
1/4 tsp almond extract
1 pinch ground cinnamon
4 oz cooked basmati rice
3 oz blueberries
Directions:
Preheat oven to 350 F. Prepare a large ramekin or small spring form pan by lightly spraying with oil. Set aside.
Combine the banana, egg, milk and extract. Mix well.
Fold in the rice and blueberries. Pour batter into the prepared pan.
Bake for 30- 35 minutes or until cake is cooked through and set.
Suggested Serving: Serve with yogurt and sliced almonds.
