Ingredients:
2 1/4 tbsp kodiak mix
1/4 tsp baking powder
1 egg
3/4 tbsp light mayonnaise
1 tsp water
Directions:
Combine all ingredients and mix well.
Heat a mini waffle maker, pancake maker or skillet.
Spray and add 1/2 the batter (about 2 tbsp) to the hot maker or skillet.
Cook until browned and cooked through. With a skillet, flip like a pancake after browned on the one side.
Repeat with remaining batter.
Variation:
Pumpkin Rosemary - add 1 tbsp of pumpkin puree + 1 tsp chopped fresh rosemary + 1/8 tsp allspice to the recipe.
Suggested Serving: These are great for sandwiches or burgers.
