Broccoli Carrot Slaw (0 points)

4 servings (1/2 cup each)


Ingredients:

1 cup uncooked broccoli, stems only, grated

1 cup uncooked carrot, grated

1/4 cup green onions, sliced

2 tbsp plain fat free greek yogurt

1/2 tbsp apple cider vinegar

1 tsp splenda

1/2 lime, juice only


Directions:

Add grated broccoli stems, grated carrot and green onion to a medium bowl. Mix and set aside.

In a small bowl, add the yogurt, vinegar, sweetener and lime juice. Whisk together with a fork.

Add 1/2 the dressing to the broccoli mixture. Mix. Keep adding dressing until it reaches desired consistency.

Store in a covered container in the refrigerator.


Suggested Serving: Serve with pork or fish tacos or as a side salad.
