Ingredients:
salmon, 2 filets
2 tsp minced garlic
2 tbsp fresh rosemary, chopped
1 lemon, juice and zest
1/2 tsp table salt
1/2 tsp ground pepper
Directions:
Prepare a baking sheet by lining it with foil and spraying lightly with oil. Set aside.
Preheat the broiler on your oven, about 5 minutes.
Place the salmon skin side down on the prepared baking sheet.
Mix together the garlic, rosemary, lemon juice and zest. Drizzle over the fish. Sprinkle salt and pepper all over.
Broil on the 2nd rack for 5 minutes or less, just enough to sear the fish.
Lower the oven to 325F and lower the baking sheet to the 3rd or 4th rack. Bake for an additional 10 minutes or until the fish is cooked.
Suggested Serving: Serve with an additional squeeze of lemon.
