Cajun Cauliflower Rice (0 points)

3 servings (1/2 cup each)


Ingredients:

1 medium green onion, sliced

1 mini sweet pepper, diced

1/2 tsp minced garlic

1 1/2 cups riced cauliflower, thawed

1/4 cup peas, thawed

1/4 cup corn, thawed

1/2 tbsp cajun seasoning

1 tbsp tomato paste


Directions:

Heat a large sprayed skillet on medium high.

Add the onion and peppers. Stir and cook for a couple of minutes.

Add the garlic. Stir and cook for another minute.

Add the cauliflower, peas and corn. Stir and cook for a couple of minutes.

Add the cajun spice and stir to mix well.

Add the tomato paste and stir to mix well again.

Cook until heated through.
