Ingredients:
8 oz skinless, boneless chicken breasts
12 gm basil paste
1 medium fresh tomato, sliced
30 gm light mozarella cheese, shredded
Directions:
Preheat oven to 400F.
Take 2, 4 ounce chicken breasts or 1, 8 ounce chicken breasts (cut in half) and pound thin.
Place on a sprayed, parchment, foil lined or silicon matted cookie sheet.
Spread 1 heaping tsp of basil paste over each piece of chicken.
Bake for 15-20 minutes or until chicken is no longer pink in the center.
Remove from oven; top with sliced tomatoes and evenly divided light mozzarella cheese.
Bake for another 5 minutes to melt cheese. Switch oven to broil for a few minutes if you wish to brown the cheese but watch it carefully as it can burn easily.
Suggested Serving: Serve with a drizzle of balsamic glaze.
Looks so good!! (Good thing you said evenly divide the cheese, or my hubby may get 1/4 & I get 3/4! LOL). Can I ask what you use for balsamic glaze? I've never had it before, but it sounds delicious!
