Cauliflower Rice Stuffing (1 point)

4 servings (1/2 cup each)


Ingredients:

4 tsp light butter

1/2 cup onion, chopped

1/4 cup celery, chopped

1/2 tsp minced garlic

1/2 cup mushrooms, chopped

1/4 tsp poultry seasoning

2 cups cauliflower, riced


Directions:

Melt butter in a large skillet over medium high heat.

Add the onion, celery and garlic. Cook and stir until veggies have slightly softened and garlic is fragrant, about 3 minutes.

Add the mushrooms and fry until they are slightly browned, about another 5 minutes.

Add the riced cauliflower and poultry seasoning. Stir and cook until everything is cooked and warmed through, about 5 minutes.

Suggested Serving: Great side dish to be served with poultry.
