Ingredients:
1 large apple, cored, peeled and chopped
2 tsp ground cinnamon, divided
1 tsp ground cardamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1 tsp cornstarch
1 tbsp maple syrup
1 cup + 2 tbsps kodiak mix
1 tsp baking powder
1 tsp baking soda
1/2 tsp table salt
1 large banana, pureed
1/2 cup unsweetened applesauce
1/2 cup plain fat free yogurt
2 eggs
1 tsp vanilla extract
Directions:
Preheat oven to 350F. Spray a 6 cup bundt pan and set aside.
Combine the chopped apple, 1 tsp cinnamon, cardamom, ginger, cloves, cornstarch and maple syrup in a microwave safe bowl and stir well.
Microwave the apples for at least 2 minutes. Stir and set aside to cool.
In a medium bowl add the kodiak mix, baking powder, baking soda, salt and the other tsp of cinnamon. Mix and set aside.
In another medium bowl add the bananas, applesauce, yogurt, eggs and vanilla.
Add the dry ingredients to the wet and mix just until combined.
Fold in the microwaved apple.
Pour batter into the prepared bundt pan. Smooth the top.
Bake for 30-40 minutes or until a toothpick inserted into the centre comes out clean.
Can also be made into 8-9 muffins. Bake at 350F for 25-30 minutes.
This is the *most* delicious cake I have ever eaten! Better than store bought loaded with calories and artificial ingredients.
