Ingredients:
4 oz frozen dark cherries, thawed and halved
2 oz banana, ripe and mashed
1 egg
1 oz 0% siggi's yogurt
1 oz almond milk, unsweetened
1/2 tsp vanilla extract
1/8 tsp almond extract
1/8 tsp ground cinnamon
1 oz uncooked rolled oats
1/2 tsp baking powder
Directions:
Preheat oven to 350F. Prepare a 6" baking dish by lightly spraying it with oil.
Add the cherries to the dish. Set aside.
Add the rest of the ingredients into a blender. Blend until smooth.
Spoon the batter over the cherries and bake for 30 minutes or until the batter is lightly browned and cooked through.
Suggested Serving: Serve with additional yogurt, fruit and a few sliced almonds.
Variation:
Lemon Blueberry/Blackberry - Substitute the cherries with blueberries/blackberries, omit the almond extract and add 1 tsp of lemon juice + 1 tsp lemon zest to the batter.
