Ingredients:
1 lb ground chicken breast
1 egg
3 tbsp dried breadcrumbs
1 tbsp italian seasoning
1/2 cup canned tomato sauce
145 gm light mozzarella, shredded
12 fresh basil leaves
12 slices fresh tomato
Directions:
Preheat oven to 350F. Spray a pizza pan lightly with oil. Set aside.
Combine the ground chicken, egg, breadcrumbs and italian seasoning. Mix until well combined.
Transfer to the prepared pizza pan and spread out, with wet hands, to the edges. Bake in the preheated oven for 15 minutes.
Pull the crust out of the oven and dress with the sauce, sprinkle on a little more italian seasoning, then add the shredded mozzarella.
Return to the oven and bake for an additional 10 minutes. Turn the oven to broil in order to brown the cheese. Watch carefully so as to not burn.
Serve slices topped with basil leaves and sliced fresh tomatoes.
Suggested Serving: Serve with a drizzle of balsamic glaze.
