Ingredients:
3 tbsp dijon mustard
1/4 tsp paprika
1/4 tsp table salt
1/4 tsp black pepper
4 slices back bacon, chopped
1/2 cup onion, diced
1 pound chicken breasts
1 cup chicken broth
Directions:
Combine the mustard, paprika, salt and pepper in n a small bowl, to make a paste. Spread the paste evenly on both sides of chicken breasts. Set aside.
In a large skillet, cook the chopped bacon on medium high heat until it starts to brown. Remove to a plate. To the same skillet add chopped onion until softened. Add to the bacon plate.
Spray skillet and add chicken breasts. Cook for about 2 minutes on each side. Remove and set aside.
To the same skillet, add 1 cup chicken broth, bring to a boil while scraping the bottom of the pan. Add back the bacon, onions and chicken and cook on low medium for 15-20 minutes or until chicken is completely cooked.
