Chickpea Blueberry Blondies (8 points)

1 serving (4 muffins)


Ingredients:

3 oz chickpeas, rinsed and drained

4 oz banana, ripe

1 oz peanut butter

1 oz uncooked rolled oats

1/2 tsp ground cinnamon

1/2 tsp vanilla extract

1/4 tsp baking powder

1/4 tsp baking soda

1 pinch table salt

2 oz blueberries, fresh or frozen


Directions:

Preheat the oven to 350F. Prepare 4 wells of a muffin tin or 6" baking dish by lightly spraying with oil. Set aside.

Add the ingredients, except the blueberries, into a blender and blend until the chickpeas and oats are broken down.

Scrape the batter into a bowl and mix in the blueberries.

Divide evenly into 4 prepared muffin wells or pour entire contents into the prepared 6" baking dish.

Bake the muffins for 25-30 minutes and the 6" baking dish for 35-40 minutes.


Suggested Serving: Eat all four for a meal (8 points) or two for a snack (4 points).
