Ingredients:
1 1/4 cups kodiak mix
1/2 cup splenda
5 tbsp unsweetened cocoa
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp table salt
2 eggs
1/2 cup plain fat free greek yogurt
1/3 cup unsweetened applesauce
1 1/2 tsp vanilla extract
1/2 tsp almond extract
1 cup cherries, fresh or frozen, pitted and chopped
Directions:
Preheat oven to 350F. Spray or line a muffin tin with parchment liners.
In a medium bowl combine kodiak mix, splenda, cocoa, baking powder, baking soda and salt. Mix and set aside.
In another bowl whisk together the eggs, yogurt, apple sauce and extracts.
Add the wet ingredients to the dry ingredients and mix gently only until combined. Fold in the cherries.
Divide the batter evenly amongst the prepared 12 muffin cups.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
I made these yesterday. They are so good!
I love Black Forest cake, I think this is going to give me that taste without all the calories!
