Chocolate Zucchini Pancakes (1 point)

10 servings (1 pancake = 1 serving) Ingredients: 1 cup uncooked rolled oats 1/2 cup kodiak mix 1/4 cup cocoa 1/4 cup splenda 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp table salt 1 1/4 cup unsweetened almond milk 1 egg 1 tsp vanilla extract 1 cup uncooked zucchini, grated Directions: Add all the ingredients except the zucchini into a blender. Blend until oats are broken down. Grate the zucchini and wring out in a tea towel to get rid of excess moisture. Set aside. Pour blender ingredients into a medium bowl and add the grated and wrung out zucchini. Mix well. Heat up a sprayed dash mini pancake maker or skillet. Add 2 heaping tbsp of batter to the griddle or skillet. Wait until pancake bubbles and flip over. Repeat until batter is gone. Should make about 10 pancakes. Suggested Serving: Serve with fruit, no added sugar pancake syrup and/or fat free cool whip
