Cilantro Lime Cauliflower Rice (0 points)

4 servings (1/2 cup each)


Ingredients:

2 cups riced cauliflower

1/2 tsp minced garlic

1 medium green onion, sliced

1 tsp dried cilantro

1/4 tsp onion powder

1/8 tsp table salt

1/8 tsp black pepper

1 tbsp fresh lime juice


Directions:

Heat a sprayed large skillet over medium heat.

Add the minced garlic and green onion and heat until fragrant, a few minutes.

Stir in riced cauliflower and cook until heated through, stirring often, about 5 minutes.

Remove from heat and stir in the cilantro, onion powder, salt, pepper and lime juice

Serve immediately.


Suggested Serving: Not a fan of cilantro, just omit or replace with dried parsley.
