Cinnamon Rolls (1 point)

Ingredients:

1 cup flour

1 1/2 tsp baking powder

1/2 tsp table salt

1 1/2 tsp ground cinnamon, divided

1 cup plain fat free greek yogurt

1 egg

3/4 tsp vanilla extract, divided

1/4 cup unsweetened applesauce

1/4 cup splenda


Directions:

Preheat oven to 375F. Place parchment paper or a silicon mat on a baking sheet.

In a medium bowl combine the flour, baking powder, salt and 1/2 tsp ground cinnamon. Mix.

Add the yogurt, egg and 1/2 tsp of vanilla extract to the dry ingredients and mix with a fork until well combined.

Lightly dust flour on a work surface and remove dough from the bowl, knead a few times.

Roll out the dough to a 12" by 6" rectangle. Set aside.

Make the filling mixture by combining 1/4 cup of applesauce, 1/4 cup splenda and a tsp of ground cinnamon. Mix well.

Paint the surface of the dough with 3 tbsp of the filling mixture. Roll up the dough length wise so you end up with as 12" roll.

Cut roll into 12, 1" cinnamon rolls and place on the prepared baking sheet. Paint the tops with the leftover filling mixture.

Bake for 20-25 minutes. Cool completely.
