Coleslaw (1 point)

10 servings (1/2 cup)


Ingredients:

1/2 cup reduced calorie mayonnaise

1/4 cup plain fat free Greek yogurt

1 tsp lemon zest

3 tbsp lemon juice

1 tsp swerve granular sugar

1/2 tsp table salt

1/2 black pepper

14-16 oz coleslaw mix

1 fresh apple, grated

2 ribs uncooked celery, sliced

2 uncooked scallion, sliced


Directions:

In a medium bowl, combine mayonnaise, yogurt, lemon zest, lemon juice, sweetener, sugar, salt and pepper. Whisk until combined.

Add the package of coleslaw mix, apple, celery and green onions. Mix well.

Cover and chill for at least 30 minutes prior to serving.

Store leftovers in a covered container in the refrigerator.
