2 servings (1/2 mixture each)
Ingredients:
3 large eggs
1 scallion, sliced
2 oz light ricotta cheese
Directions:
Whisk eggs a medium bowl until blended. Set aside.
In a medium skillet, melt butter over medium heat. Add the scallions. Cook for a minute then add the eggs. Stir and cook until eggs are no longer runny.
Remove from heat, add the ricotta and stir until just incorporated but clumps of cheese are still visible.
Suggested Serving: Serve with back bacon, vegetables, fruit and/or toast.
