Ingredients:
4 large hard boiled eggs, peeled and halved
1 1/2 tbsp plain fat free greek yogurt
1 tsp fat reduced mayonnaise
1 tsp mustard
1 medium green onion, diced
1 tbsp capers, diced
1/2 stalk celery, diced
Directions:
Slice the peeled eggs in half lengthwise, removing the yolks to a separate bowl.
Mash all the yolks with a fork to a fine crumble and add the yogurt, mayonnaise and mustard. Mix in the onion, capers and celery.
Evenly dispense the yolk mixture into the egg whites.
Suggested Serving: These can be served sprinkled with paprika or chopped chives.
