Feta & Cranberry Barley Salad

4 servings (1/2 cup each)
Ingredients:
2 cups pearl/pot barley, cooked
60g light feta, cubed
1/3 cup reduced sugar craisins
1/3 cup pine nuts, toasted
3 scallions, sliced
2 tbsp olive oil
2 tbsp lemon juice
1 tsp maple syrup
1/2 tsp dijon mustard
Directions:
In a medium bowl, combine the barley, feta, craisins, pine nuts and scallions. Set aside.
To a small container, add the olive oil, lemon juice, maple syrup and mustard. Cover and shake to mix. Add to the salad. Toss well.
Chill before serving.
