Ingredients:
6 oz onion, thinly sliced
1/2 tsp dried thyme
3 cups beef broth
4 oz mushrooms, sliced
4 oz carrots, sliced
2 oz celery, sliced
Directions:
Lightly spray a medium soup pot and heat on medium high. Place the sliced onion in the pot.
Add the thyme and cook, stirring often, until the onions are golden brown and caramelized, about 30 minutes.
Add the vegetables and continue to simmer until soft, about 15 minutes.
