Gingerbread Pumpkin Loaf (1 point)

Ingredients:

1/2 cup pumpkin puree

1 egg

4 tbsp almond milk

1/3 cup unsweetened applesauce

1 tbsp molasses

1/2 tsp vanilla extract

1 cup kodiak mix

6 tbsp splenda

1 tsp baking soda

1/2 tsp table salt

1 tsp ground cinnamon

1/2 tsp ground ginger

1/2 tsp ground cloves

1/8 tsp ground nutmeg


Directions:

Preheat oven to 350F.

In a medium bowl, mix together the pumpkin puree, egg, almond milk, applesauce, molasses and vanilla until well combined.

In a separate medium bowl, whisk together the kodiak mix, splenda, baking soda, salt and the spices.

Stir the dry ingredients into the wet ingredients and mix just until combined.

Pour into a sprayed 8"x 4"loaf pan. Smooth the top.

Bake for about 40 minutes or until a toothpick inserted into the centre comes out clean.


Variations:

Pumpkin Gingerbread Bars - pour batter into an 8"X 8" prepared pan. Bake @ 350F for 25-30 minutes.

I followed the directions exactly (even including the Swerve) and cooked it for 40 minutes and it wasn't baked on the inside at all. I have it back in the oven for another 20 minutes and I'm hoping that will work.


Any ideas? I'm completely baffled.

The pan is metal

That’s okay! I’m going to try in an 8x8 next time as that will help it cook more quickly. :)
