Gingerbread Pumpkin Oatmeal Bakes (0 personal points)

Ingredients:

2 cups old fashioned oats

1/2 cup splenda

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp table salt

1/2 tsp ground ginger

1/4 tsp ground cloves

1/4 tsp ground allspice

1/8 tsp ground nutmeg

2 eggs

1 1/2 cups pumpkin puree

1 1/2 tbsp cooking molasses

1 tsp vanilla extract


Directions:

Preheat oven to 350F. Spray 8 wells of a 12 well bar pan. Set aside.

In a medium bowl, mix all the dry ingredients together. Set aside.

In another medium bowl, combine all the wet ingredients. Stir into the dry ingredients. Let sit 10 minutes.

Divide the batter evenly (4 tbsp) into the 8 wells of the prepared pan.

Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Serve warm, cold or reheated.


Suggested Serving: Serve with fruit, whipped cream, pancake syrup or any topping desired.
