Basic Granola (1 point)

8 servings (3 tbsp)


Ingredients:

1 1/2 cups quick or old fashioned oats

1 tsp ground cinnamon

1 tsp vanilla

1/2 tsp almond extract

1 pinch salt

3 tbsp no added sugar pancake syrup

1 egg white


Directions:

Preheat oven to 325F.

Mix all the ingredients together.

Spread mixture on a sprayed, parchment lined or silicon mat cookie sheet.

Bake 30 minutes, stirring occasionally and rotating the sheet to prevent burning. Cool completely.

Crumble and store in a covered container.


Variations:

Chai Tea Granola - add the contents of 2 chai tea bags to the basic granola recipe.

Chocolate Granola - add 1 tbsp cocoa to the basic recipe.

Coffee Granola - add 2 tbsp finely ground black coffee to the basic recipe.

Earl Grey Granola - add the contents of 2 earl grey tea bags to the basic granola recipe.

Gingerbread Granola - add another 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg, 1/8 tsp cloves and 2 tsp of molasses to the basic granola recipe.

Peanut Butter Granola - add 4 tbsp powdered peanut butter, 2 tbsp water to the basic granola recipe

Caramel Tea Granola - add the contents of 1 caramel tea bag, omit the cinnamon and almond extract but substitute 1 tsp of caramel extract instead of vanilla extract to the granola recipe.

Berry Tea Granola - add the contents of 2 berry tea bags to the basic granola recipe.

Mocha Granola - add 1 tbsp of my Mocha Mix (see recipe) to the basic granola recipe.

Apple Pie Spice Granola - substitute 1 tsp apple pie spice instead of the cinnamon and 1 tsp of caramel extract instead of the vanilla and almond extract.
