12 servings (1/2 cup each)
Ingredients:
14 oz pkg coleslaw mix
1/4 medium red onion, thinly sliced
15 banana pepper rings, chopped
2 tbsp olive oil
2 tbsp red wine vinegar
2 tsp fresh lemon juice
1/8 tsp dry mustard powder
80 gm light feta cheese, crumbled
1 tsp greek seasoning
Directions:
Place cole slaw mix, onion and peppers in a large bowl and toss. Set aside.
Place the olive oil, vinegar, lemon juice, greek seasoning and mustard in a covered jar and shake to blend.
Pour over cabbage mixture and toss well. Mix in the feta cheese
Let sit for at least 30 minutes before serving so the flavours can develop.
Suggested Serving: Serve with grilled meat; chicken, pork, turkey or fish.
