8 servings (1/4 cup each)
Ingredients:
2 cups chickpeas, drained but save liquid
1/4 - 1/2 cup chickpea liquid
4 cloves garlic, minced
1/4 cup lemon juice
Salt and pepper to taste
Note: It you like cumin, add 1 tsp.
Directions:
Pour your drained chickpeas into your blender or food processor. Save the liquid to use.
Add the garlic, lemon juice, salt and pepper.
Add 1/4 cup of the chickpea liquid.
Blend or process until your hummus is creamy and smooth. If not smooth enough, add another 1/4 cup of the chickpea fluid. Process.
Pour into a bowl and garnish with a sprinkle of spices.
Variation:
Dill Pickle - add 5 baby or 2 regular chopped dill pickles + 3 tbsp of dill pickle juice + 1 tbsp dried dill + 1 tsp ground cumin
Suggested Serving: Can be used as a dip, salad dressing or as a sandwich spread.
This is a great recipe--and I eat it with baby carrots for a really filling snack!
