8 servings (1/4 cup each)


Ingredients:

2 cups chickpeas, drained but save liquid

1/3 cup chickpea liquid

4 cloves garlic, minced

1/4 cup lemon juice

1 tsp ground cumin

1/4 tsp table salt


Directions:

Pour your drained chickpeas into your blender or food processor. Save the liquid to use.

Add the garlic, lemon juice, cumin and salt.

Add 1/4 cup of the chickpea liquid.

Blend or process until your hummus is creamy and smooth. If not smooth enough, add a little more of the chickpea fluid. Process.

Pour into a bowl and garnish with a sprinkle of spices.


Suggested Serving: Can be used as a dip, salad dressing or as a sandwich spread.


Variation:

Dill Pickle - add 5 baby or 2 regular chopped dill pickles + 3 tbsp of dill pickle juice + 1 tbsp dried dill

This is a great recipe--and I eat it with baby carrots for a really filling snack!
