Hummus Crusted Chicken (0 points)

Ingredients:

4 boneless, skinless chicken breasts

1 tsp table salt

1/4 tsp black pepper

1 tsp ground cumin

1 tsp paprika

1/2 cup hummus (see my recipe)


Directions:

Preheat oven to 400F. Cover a baking sheet with foil and lightly spray with oil. Set aside.

Dry the chicken breasts on all sides with paper towels, then season with salt, pepper, cumin and paprika.

Arrange chicken on the prepared baking sheet. Spread the hummus over each chicken breast (about 2 tbsp over each) until it is evenly and completely covered.

Bake until chicken is cooked through about 20-25 minutes.

Turn the oven on broil to brown a little, about 3 minutes.


Suggested Serving: Serve with a sprinkle of sesame seeds, chopped parsley and a squeez of lemon.
