Kodiak Bagels (1 point)

Ingredients:

1 cup kodiak mix

2 tsp baking powder

1 cup plain fat free greek yogurt

1 egg white, beaten


Directions:

Preheat oven to 375F. Place parchment paper or a silicon mat on a baking sheet or spray a donut pan.

In a medium bowl combine the kodiak cakes mix with the baking powder and whisk well. Add the yogurt and mix with a fork until well combined.

Lightly dust flour on a work surface and remove dough from a bowl, knead the dough a few times.

Divide into 7 equal balls for 1 point OR 5 equal balls for 2 points OR 3 equal balls for 3 points (I use a scale). Roll each ball into a 1/2" rope and join the ends to form the bagels. Place on the baking sheet or the donut pan.

Top with egg wash and sprinkle with the seasoning of your choice. Bake on the top rack of the oven for 22-25 minutes. Let cool completely before cutting.


Suggested Serving: Add any add-ins (fruit, veggies, cheese, pickles, olives) to the dry ingredients before the yogurt is added. Remember to add on any extra points.
