Ingredients:
2/3 cup kodiak mix
1 tsp baking powder
1/2 tsp table salt
2/3 cup plain 0% siggi's yogurt
1 egg white, beaten
Directions:
Preheat oven to 375F. Prepare a baking sheet by lining it with parchment paper. Set aside.
In a medium bowl combine the kodiak mix with the baking powder and salt, Whisk well. Add the yogurt and mix with a fork until well combined.
Lightly dust kodiak mix on a work surface and knead the dough a few times.
Divide into 4 equal parts. Roll each ball out to form a rope.
Join the ends together to form your bagel and repeat with the rest of the balls.
Place the bagels on the prepared baking sheet.
Brush each bagel with the egg wash and sprinkle with the seasoning of your choice.
Bake for 25 minutes. Let cool completely before cutting.
Variations:
Flatbread - roll out each ball into a rough circle/oval about 1/4" thick. Dry-fry in a heated skillet or griddle. Cook 2-3 minutes per side or until golden brown and cooked through.
