Ingredients:
1/2 cup kodiak mix
1/2 tsp ground cinnamon
1/4 tsp table salt
3 eggs
1/2 cup almond milk
Directions:
Preheat oven to 350F. Spray an 8"x 8" square pan or 8 wells of a 12 well whoopie pie pan. Set aside.
Add all the ingredients a blender and blend until smooth. Let rest 15 minutes.
Pour the batter into the square pan or divide batter evenly (2 tbsp) into 8 wells of the whoopie pie pan.
Bake until cooked through. Square pan around 20-25 minutes. Whoopie pan 10-15 minutes.
Suggested Servings:
Pumpkin Kodiak Pancake Bake - Add 1/2 cup pumpkin puree, 1/2 tsp pumpkin pie spice, 2 tbsp splenda, 1 tsp baking powder and 1 tsp baking soda.
Fruit Kodiak Pancake Bake - fold in a 1/2 cup of chopped soft fruit or berries before baking.
Other add-ins: chocolate chips, nuts, seeds for sweet or cheese, garlic, spices for savoury. Remember to include any additional points as needed.
